Arguably one of the most popular cocktails in Lagos, this combination of rum and lime juice (and optional mint leaves) makes for an incredibly refreshing drink perfect for a hot sunny day! (which is almost everyday in Nigeria).

What you need (1 serving)

-White Rum (Bacardi is perfect, 2 ounces)

-Simple syrup (½ an ounce)

-Lime juice (1 ounce)

-Sparkling water (San pellegrino)

-Sugar (1 cube )

-Mint leaves (optional)

Mix the lime juice, sugar and mint leaves in a jug, crushing the mint as you go. Pour into a glass and add a handful of ice.

Pour in the rum, stirring with a long-handled spoon. Top up with sparkling water, garnish with mint and serve.
